Rufus Estes

Rufus Estes (c. 1857–1939) was an American chef and author born into slavery in Tennessee who later became a celebrated chef for the Pullman Company, serving industry magnates and U.S. presidents. He published the cookbook Good Things to Eat in 1911, which is recognized as one of the first cookbooks written by an African American.
