Pieter Walstra

Pieter Walstra was a Dutch professor and researcher known as a leading authority in dairy science, particularly for applying physical chemistry and colloid science to understand the behavior of fat globules in milk and other dairy systems. He served as professor of Dairy Science from 1982 to 1996 and is associated with influential textbooks on dairy science and food chemistry.[1][3]
