Pellegrino Artusi

Pellegrino Artusi was an Italian writer and businessman best known for his influential 1891 cookbook, *La scienza in cucina e l'arte di mangiar bene* (*Science in the Kitchen and the Art of Eating Well*). He is widely regarded as a founder of modern Italian cuisine and helped popularize a shared national culinary tradition.
