Dr. Steven R. Gundry, born July 11, 1950, is an American cardiothoracic surgeon, medical researcher, and New York Times bestselling author known for pioneering innovations in heart surgery and promoting a controversial lectin-free diet.[1][2][5] After a distinguished career performing over 10,000 surgeries, developing medical technologies, and serving as Chairman of Cardiothoracic Surgery at Loma Linda University, he shifted focus in 2002 to nutrition, founding the Center for Restorative Medicine to treat chronic diseases through dietary interventions.[2][3][7] His influential books include 'The Plant Paradox' and 'Dr. Gundry’s Diet Evolution,' advocating the avoidance of lectins in common foods.[1][5]
